With Shaughnessy beans we aim to add to our selection and bring forward coffees we love and want to drink everyday at the shop.
This coffee is grown by Randolfo Pacheco in Guatemala and sourced by Semilla Coffee. Chocolaty and sweet, it is perfect as espresso or for a more classic cup of filter coffee.
All of Semilla's work in Guatemala is with a group of (extremely remote) indigenous Xinka (pronounced CHEENG-ka) coffee producers called "Cafe Colis Resistencia". We aim to purchase 100% of their coffee every year. Randolfo is an indigenous Guatemalan land protector. Before working with us, he sold all of his cherries at a low conventional price, and now receives a differentiated price for his high quality microlots. His farm is so small that he struggled to meet the minimum processing requirements for a local mill, leading him to innovate and begin processing his coffee himself.
